On February 9, Chick-fil-A released an interview with Stuart Tracy, the man behind the sandwich.
“When most people think about a plant-forward sandwich, they might picture a patty molded from chopped vegetables,” explained Tracy. “But this sandwich is what you could call a cauliflower steak. It’s whole cauliflower, cut then breaded in Chick-fil-A seasoning and pressure cooked.”

Not only are fast food restaurants incorporating the vegetable into their menus, but home cooks are also adding it into their diets. Recipes for cauliflower chickpea curry, teriyaki cauliflower power bowls, and cauliflower shawarma bowls are just a few examples of the many dishes made with this simple ingredient that are on the rise.
