At Baked, we live for easy dinner recipes. As college students, we do not have the time to cook Michelin star meals after getting back from classes. But if you make this simple, three-ingredient stir fry recipe, you’ll surely feel like a five-star chef.
Ingredients:
- Asian Style Cauliflower Rice (Wegmans Brand)
- Shrimp (pre-cooked or raw)
- Stir Fry Sauce (packaged or make it yourself)
Note: The recipe can be modified for vegetarians using tofu instead of shrimp!
Directions:
To make this recipe, follow the instructions as stated on the packaging. Bring out a large pan, and add the cauliflower rice package to it. You can cook this right from the freezer. The Wegmans cauliflower rice package includes riced cauliflower with edamame, corn, red and green peppers, and soy seasoning. After a minute or so, add in the shrimp. I usually put in about seven small pieces, but add as much as your heart desires! It should take about 6 to 8 minutes to cook in the pan. After a few minutes, add stir fry sauce, and keep sautéing. If you are using raw shrimp, make sure it is cooked until the skin starts to turn translucent. Once everything is cooked, mix it all together in a bowl, and you are all set to enjoy!
To add even more to this easy recipe, you can put in more spices and fun ingredients. One way to spice things up is to add toppings, such as nuts like cashews, peanuts, or some sesame seeds. A fried egg can add some more protein too! When cooking everything together, you can add fresh ginger or ginger paste for a little bit of sweetness.
