This healthier version of a Twix bar is a much-needed break from the influx of Halloween candy that finds its way into daily life each October. Surprise your trick-or-treaters with these homemade treats, or bring them to a Halloween party! And feel free to treat yourself to as many of these as you’d like—they’re vegan, can be made gluten-free, AND have the added nutrition of raw dates.

Ingredients:
For the crust:
• 1¼ cups Rice Krispies
• ¼ cup maple syrup
• 2 Tbsp. peanut butter
• 1 tsp. vanilla extract
• A pinch of salt
For the “caramel”:
• 1¼ cups soft pitted dates
• 1 Tbsp. peanut butter
• 1 Tbsp. non-dairy milk
• A pinch of salt
For the coating:
• ½ cup dark chocolate chips
• 1 tsp. coconut oil
Instructions:
- In a saucepan, combine maple syrup, peanut butter, and vanilla. Bring to a simmer, and stir until all ingredients are melted together. Add the salt, and then pour the mixture into a large bowl with the Rice Krispies.
- Scoop this mixture into an 8×8″ pan. Spread it out evenly in the pan, and place in freezer.
- While that’s chilling, soak the dates until soft and drain. Add dates, peanut butter, milk, and salt into a food processor and blend until smooth.
- Spread this layer over the first layer, and place it in the freezer for 10 more minutes.
- Melt the chocolate and coconut oil together and spread over the first two layers of the bars. Place it in the freezer for a few minutes to set, and then slice into super healthy Twix bars!
