Ingredients:

For the crust:
• 1¼ cups Rice Krispies
• ¼ cup maple syrup
• 2 Tbsp. peanut butter
• 1 tsp. vanilla extract
• A pinch of salt

For the “caramel”:
• 1¼ cups soft pitted dates
• 1 Tbsp. peanut butter
• 1 Tbsp. non-dairy milk
• A pinch of salt

For the coating:
• ½ cup dark chocolate chips
• 1 tsp. coconut oil

Instructions:

  1. In a saucepan, combine maple syrup, peanut butter, and vanilla. Bring to a simmer, and stir until all ingredients are melted together. Add the salt, and then pour the mixture into a large bowl with the Rice Krispies.
  2. Scoop this mixture into an 8×8″ pan. Spread it out evenly in the pan, and place in freezer.
  3. While that’s chilling, soak the dates until soft and drain. Add dates, peanut butter, milk, and salt into a food processor and blend until smooth.
  4. Spread this layer over the first layer, and place it in the freezer for 10 more minutes.
  5. Melt the chocolate and coconut oil together and spread over the first two layers of the bars. Place it in the freezer for a few minutes to set, and then slice into super healthy Twix bars!
