Lemon Ice Cream Recipe

Is anyone as excited for those long summer days as we are? With the semester coming to an end and the sun making its debut again, we are more than ready to pull out our beach chairs and sit out in the sunshine all day. What better way to relax outside than with a cool treat in your hands? Luckily, we have a lemon ice cream recipe that is easy to make and so refreshing. Not only are the ingredients easy to access and most likely already in your home, but the recipe itself is super simple – all you need is a blender! Feel free to swap out the lemon with any other fruit of your choosing if you’d like a different flavor; this recipe was made for any frozen fruit, but lemons will give bright citrus-y vibes.

For this treat, you will need:

  • 1 cup of peeled lemon, cut up and frozen
  • ⅓ coconut milk (best chilled)
  • ⅓ cup of lemon juice (freshly squeezed, if available)
  • 2 tbsp of maple syrup or honey
  • 1 frozen banana (best ripped)
  • Optional: poppy seeds, if you want a lemon poppy seed ice cream

Blend all the ingredients together, and there you have it! If your ice cream is more runny than you prefer, pop it into the freezer for 30 minutes to 2 hours until you are satisfied with the consistency. Feel free to add on any toppings for this healthy and tasty treat. Enjoy your well-earned treat after a long semester!
