We can’t help but crave pumpkin goodies once there is a chill in the air on campus. But living in a dorm can limit our baking abilities, and the dining hall might not have fun pumpkin treats available, making it hard to get our daily dose of pumpkin. Luckily, we have a solution: a vegan microwave pumpkin mug cake. This delightful mug cake is quick, easy, and oh-so-cozy – the perfect pumpkin treat!
Ingredients:
- 4 tbsp of flour
- 2 tbsp of sugar
- ½ tsp of pumpkin spice seasoning
- 2 of tbsp pumpkin puree
- 3 tbsp of plant based milk
- Pinch of salt
- Chocolate chips (optional)
Instructions:
- Add all the dry ingredients into a microwave-safe mug and mix.
- Add the wet ingredients in and mix well until combined.
- Microwave for 2 minutes, and enjoy!
