Vegan Microwave Pumpkin Mug Cake

We can’t help but crave pumpkin goodies once there is a chill in the air on campus. But living in a dorm can limit our baking abilities, and the dining hall might not have fun pumpkin treats available, making it hard to get our daily dose of pumpkin. Luckily, we have a solution: a vegan microwave pumpkin mug cake. This delightful mug cake is quick, easy, and oh-so-cozy – the perfect pumpkin treat!

Ingredients:

  • 4 tbsp of flour
  • 2 tbsp of sugar
  • ½ tsp of pumpkin spice seasoning
  • 2 of tbsp pumpkin puree
  • 3 tbsp of plant based milk
  • Pinch of salt
  • Chocolate chips (optional)

Instructions:

  1. Add all the dry ingredients into a microwave-safe mug and mix.
  2. Add the wet ingredients in and mix well until combined.
  3. Microwave for 2 minutes, and enjoy!
